I am roasting veggies in the oven, potatoes, carrots, onions, turnips, salt, EVOO and garlic powder with that I am making grilled chicken thighs.

I am having something I saw for the first time at the store recently, which was pork cube steak. We like regular cube steak, so I expect we'll like this. It was very cheap, too. Noodles, jar o gravy, and a green veg.

A strawberry 9 grain granola non-fat Greek yogurt, 2 slices of whole wheat bread with healthy-style margarine & strawberry spread and a mug of tea with a teaspoon of sugar & a bit of skim milk.

Dinner was going to be shrimp creole, which I already made. However, since I am home alone tonight, I made a creole shrimp scampi--not sure if there is such a thing. Made the scampi, added okra, scallions, and sauce from the creole and put it over rice. It was delicious, which was a very pleasant surprise. Unsweetened iced tea to drink.

SXMGirl, what is the difference between the creole and scampi?
We don't eat seafood or fish so I am not familiar with any of those type dishes.

Debsi, what is Spaghetti and Gravy? Is the gravy the red spaghetti sauce?
