Bowl of tomato and basil bisque, huge veggie and fruit salad with lots of apples and grapes and topped with a bleu cheese maple vinaigrette, made a batch of fire crackers, and unsweetened iced tea to drink. Chocolate mousse with whipped cream for dessert.
We had a similar problem with rib eyes going to the dogs next door and me improvising for company. The grill could just not keep up with a Texas blizzard.
At least heat up a can of soup to go with the sandwich.
UGH It was sooo frustrating. It wasn't cold or anything. I think I need a new grill or at least that's what I'm telling myself, lol

I had a nice piece of left over roast pork loin. I cut it up, along with a red pepper, onion, garlic and parsley. Sauteed the veg and added the diced pork for a bit. Threw in the last tomato from the garden, some tomatillo salsa, a little sour cream and simmered it for a little while.
Meanwhile, I dipped some flour tortillas in enchillada sauce, grated some cheddar and then assembled the enchilladas. Topped the enchilladas with more grated cheddar.
Baked all for 30min at 325 for 35 minutes. It was such a nice way to use left over pork. Enough left for dinner tomorrow night!!!
Round steak pot roast, with carrots, onions, and thyme, over garlic mashed potatoes. Still working on leftover Halloween candy for dessert.
