I came home to dinner already made, chicken soup with dutch noodles cooked to add. Good meal for the
weather this time of year and am jealous of folks basking in the 70's!

I thought I had a full package of beef smoked sausage but there was only half (approximately 7 ounces) so I knew I would have to embellish my usual sausage and potato skillet dinner.
In my largest skillet I sauteed about 5 small red potatoes and an onion in oil and butter with garlic, rosemary and basil I had frozen in olive oil in ice cube trays.

Then I added my chopped up sausage and cooked for a few minutes. Next came mushrooms and a can of mushroom soup mixed with a can of milk and a squirt of mustard.
With about 15 minutes left before the potatoes were cooked I added a small amount of broccoli (Which wasn't enough for a side dish anyway). Put a lid on it and let it blend for about 15 minutes. I don't like mushy broccoli and it was still a bit crunchy but still steamed cause I didn't stir it all into the rest of the ingredients.

I added sliced tomatoes with homemade blue cheese dressing and we had a fabulous dinner if I do say so myself.

One tip.. cook the meat separately and drain the fat before adding it to the tomato sauce.
Add some basil/Oregano/salt and pepper. i like penne pasta but any pasta will do.Grated fresh Parmesan cheese really adds a good flavor.

I already told you I made meatloaf, mashed potatoes and roasted veggies, but the veggies were awesome.
3 Beets, 1# carrots, 1# parsnips, and 2 turnips, roasted with 3 T olive oil for about 40 minutes at 425. Topped with a glaze made from 3 c. apple cider, 1 c. vinegar and 1 T sugar, cooked down for about an hour to about 1/2 cup glaze. Very very good.
I made apple wraps instead of oatmeal cookies.

Take out from my favorite Mexican restaurant: Chicken burrito, guacamole, Pico de Gallo and 3 salsas (hot, medium and mild). I love freshly made salsas.

spicy soup with beef and noodles (I cannot remember the name in Vietnamese)
