Default keeping potatoes from changing color

I've got some red potatoes cut up and sittin' in water, gettin' ready to cook 'em for dinner tonight. I want to season it right now but I'm afraid if I take it out of the water, it will change color - you know that yucky brown/yellow hue. If I take the red potatoe out and season with salt/pepper/rosemary/garlic will the potatoes change colors?

Are you using olive oil on them too? I think if you are coating them in oil to roast them, this should seal out the air and keep them from turning.

Heya Foma... (that sounds like some sort of disorder :~} you can add a little lemon juice to the water, that will help... if you are roasting them a coat in olive oil like Gentlarts said, but, when I season them I put the herbs, spices, etc... on a paper plate and Press them into it... makes it stick better and infuses them more... happy eating...

DUH, yes, I will be using olive oil. Okay, I'm going to take your advice and coat/season the potatoes now and then sticking it in the fridge until I need to start puttin' them in the oven. *fingers crossed* Thanks!!

Foma....potatoes and apples are amongst the foods changing colors when exposed to air...."oxidation".
Wait until you are ready to actually make them, before you take them out.
Lemon juice, for instance, prevents apples from oxidizing.....but not sure, what could be done for potatoes.

actually, i put all my seasoning in, stuck it in the fridge and it stayed perfect for a couple of hours. Looked great!
