Especially expensive cuts of steak, I just don't get it.
Some people, like me, eating is more of a texture thing that it is a taste thing. Generally we like food that has some RESISTANCE. I LOVE a chewy piece of meat. In fact, I *LOOK* for the gristle in steaks, etc because I love those parts the best.
My favorite cut of steak is a Sirloin that is extra-well done. I do not enjoy, nor appreciate the "tender cuts" and frankly, a filet mignon is just a waste of money because, even when you cook the begesus out of it, it still doesn't have much texture.
A boyfriend of mine once "encouraged" me to eat a really rare steak (as rare as they come), and I think you could have just sucked it down without chewing. What is the point? If you're going to do that, you might as well just have soup.

A skirt steak is perfect for you, it's got the chewiness even medium-rare. I still prefer a skirt steak medium rare and seared to perfection.
Well done. If it's oozing or even trickling blood, it's going back.
I always laugh at those who say they can't cook a good well-done steak. They just plain don't know how to cook. A well-done steak, cooked correctly (and tenderized correctly) will be just as flavorful as can be. I tenderize beef in vinegar.
I can't eat rare red meat, no rare steaks, or rare hamburger, and no prime rib. It gives me terrible stomach pains since I got my gallbladder out. Don't know why. At least medium well and it doesn't bother me.
