Not terribly healthy, but will be hugely popular with the kids - hot dog bar. Boil hot dogs, then offer a variety of toppings.... cheese, relish, mustard, ketchup, chili.....
how about cheese fondue with an assortment of fruit, veggies, and meat?

a basic salad, with a selection of build your own toppings. So you can eat healthy with lots of veggies, they can add hard boiled eggs, chicken or steak, cheese, nuts, etc.

i saw some natural casing hot dogs last week wrapped in bacon,,,, i didnt buy any , but they looked delicious!!
I cook everything from scratch but make mostly vegan/vegetarian food, lots of legumes, whole grains, veggies.
Now my family with 4 kids & 4 adults are coming to ski here with us for a week.
They are used to eating pre-packaged foods out of the freezer.
I wouldn't try to duplicate "pre-packaged foods." Chances are that's what they eat because no one is wililng to cook from scratch.
Go ahead and slide in one or two of your meatless meals, they're certainly going to be flavorful and healthy. Make sure there's peanut butter and hot dogs/buns on hand in case anyone truly doesn't like what you've created. Something that you make regularly and enjoy is probably going to taste as good or better than something you've never done before (does that make sense?).
I wouldn't make myself crazy planning 7 dinners for a week's visit. Surely your guests would take their hosts out for dinner at least once in appreciation for your hospitality.
