Okay...now I have to try out that "Spanish tortilla"!! Personally, I love a good 2-egg omelet...paper thin, bulging with Sausage, mushrooms, bacon, cheese and onions. OMG.....YUM.... Throw in some crispy homemade hashbrowns w/ gravy and OMG!!! Heaven!
If you had a choice AND like any of these: Quiche, Frittata, Strata, Tortilla (a Spanish egg dish) or Omelet with similar "fillings" aka ham and swiss, veggies etc.
Which do you prefer?
I like the Tortilla with thinly sliced potatoes and chorizo. (spanish wine dry aged type of chorizo) (See pic further down this page)

I have never had the Tortilla version although it does sound yummy.
I like all kinds of fillings and what the dish consists of is based on what I have on hand. Usually the staples in my egg dishes are onions, parsley, mushrooms and sometimes an additional protein that is in the refrigerator.
Omelet with cheese and hot salsa.
Spanish tortilla is ok too, especially accompanied by Padron peppers. I grow my own, so every year from July through September, I am able to enjoy this meal.
Don't like quiche - too greasy.
If I do eat quiche, it has to be a crust with butter. The ones with shortening or lard smell and taste absolutely disgusting.
In Europe, you can find prepackaged Spanish tortillas (including versions with onions) in the grocery stores, but they're not as good as the homemade ones.
I am in the Spanish tortilla club. Yummy! But I haven't baked one. I have loads of potatoes to use, so I might need to do that soon. I just cook mine on the stove.
Stratas are great - delicious and so easy to prepare ahead of time. I used to make them more often when my kids were young, but everyone loved them. Quiches are actually my favorite but a lot more work to prepare.
Maybe not. Last week I made a crustless spinach, bacon and cheddar quiche. OK, I had to mince some onion and shred the cheese, but it didn't take very long to put together. To save time, I microwaved the bacon and used frozen spinach. It wasn't my best effort but it was still pretty tasty.
