I am thinking of Starting Either a Food Truck or Fixed location somewhere in Houston within the next couple of months.

All pies will be just like in Australia, Flakey Pastry Top and Thicker pastry sides.
They will all be about 50-70mm High and about 120mm diameter (roughly speaking)


My Menu Idea's so far;

Plain Meat Pie
Cheese Bacon Meat Pie
Bacon and Egg Pie (yummm)
Chicken & Veg (similar to a pot pie)
Sausage Rolls (2 varieties plain & bacon/onion)
Chunky Angus Steak Pie
Steak and Kidney
Steak and Mushroom
Tomato Sauce & Onion Pie (No Need for sauce on top - my favourite)
Plain Curry Pie
Thai Vegetable
The Pie Floater
Mushy Pea
Potato Pie (of course) or Shepards Pie
Pork Pies (for the expat Poms)
Fish Pie or Seafood Pie (Has a creamy gravy/sauce delicious)

and some other Aussie Items like Apple Cream Tart, Custard Tart, Vegemite Cheese Scroll. etc...

I am considering baking loaves of bread also (like we get in Australia)

These will all be made locally and to the Aussie style and taste.

I make them myself and have satisfied many of guests with my creations.

Who's Keen? and any suggestions/thoughts would be much appreciated.

Are you at all familiar with the restaurant business here, or operating a food truck?

As far as your menu goes, getting Houstonians to appreciate such things as Mushy Pea or Steak and Kidney filling in a heavy lard crust is going to be a hard sell.

@Svensk,

I have some knowledge of the Food Truck business but not much in the way of restaurants.

All flavours are not to everyones tastes here in Australia either but hey we still have them on the menu each to their own I suppose.

In new york the Tuck Shop is now in multiple locations
Pie Face from Syd is doing well

In Boston kO Catering makes great pies, including lamb shank, and has expanded as well

It might work in houston as well

It might work, but first of all remove the vegemite!!! That stuff is absolutely horrible and I'll bet almost no one here will have a taste for that rancid-ness. Next, take the British-sounding names and Americanize them. No one will think kidneys and mushy floaters are appetizing.

I always wondered why you couldn't find any Australian cuisine here. Then I actually went there, and understood exactly why. Nothing is terrible besides vegemite, meat pies are fine but there is nothing to write home about either (except for Asian and the local produce). Maybe you could change that?

I say start in the inner loop where the youngest people congregate. But please, remove the vegemite.

Will there be no rules, but just right?

Seriously though, sounds yummy to me. I've never had Aussie style pies or breads like you describe. Once you open, post up here so we can come try them.

Geez those things sound "heavy."

Food truck might be best until you find your target audience. Inside the loop, or out in the Energy Corridor with all the expats. Maybe hitting a MPC TownCentermarketstreetsquarethingie on the weekends.Places inbetween are going to be a hard sell.
