While the standard espresso drinks in the States consist of a macchiato, cappuccino, red eye, latte, etc., when you peek around the corner at how the rest of the world takes their coffee, you’ll be impressed at the variety. In Italy, Espresso Romano consists of a lemon slice dropped in an espresso. In Austria, a Wiener Melange layers a cup of espresso, an egg yolk, brown sugar and whipped cream. In Spain, honey gets topped with an espresso, steamed milk and cinnamon.

A traditional Melange is a "Mokka" (essentially an Espresso) or a "Verlängerter" (a Mokka with double the amount of water) with steamed milk and milk foam. No eggs involved

I know of two other Austrian recipes with egg, though:

Almkaffee (mountain pasture coffee ):
- Coffee (black)
- 1 yolk
- Austrian fruit brandy (e.g. Obstler, Marillen Schnaps)

Kaisermelange (Emperor's Melange):
- Two "Mokka" (or Espressi)
- Mix 1 yolk, some heavy cream and sugar. Beat till foamy. Put that into the mugs.
- Add the coffee
- Mix with some cognac
