We're not rich enough to not like/not eat leftovers. After the first or second day I put them in the freezer for another time.

Stop wasting food.
I don't, I was raised by members of the greatest generation. They wasted nothing.

I ran across this tip this morning, in Mary Hunt's Everyday Cheapskate newsletter and thought of this thread....I never even considered that I was wasting good food when I peeled potatoes over the garbage can! I love potato peels! (I'd leave off the Italian dressing, though, as I'm not too fond of it, and just use some olive oil and my own seasonings.)
REPURPOSED PEELS. When peeling potatoes for mashed potatoes, save the peelings. Toss them in a bowl, season with salt, pepper and a little Italian dressing and bake at 400 F for 20 minutes, or until they are crispy. Enjoy a quick and healthy snack.

I was raised not to waste and it always irks me how many people take more than what they'll eat at buffets and throw half of it away. Granted, they throw away a lot of food at buffets to begin with.
My step father does not like leftovers and when I go over there I end up taking food home with me and using it as an entire meal for the next day every time I visit.

I avoid wasting anything, but some people have strange methods of dealing with "waste".
My drug addict (they actually are so this is no exaggeration) "neighbors" who live above me, throw food they haven't finished out of their window. Yes for real. They just chuck their garbage out of the window.

For soft and bruised bananas, we throw them in smoothies.
If we make too much food but not enough for a serving, we split the difference between our dogs.
When bread is about to expire, we put it in the fridge and dole out to the critters/birds in the back yard.
The part of the lettuce we don't want (bruised, blackened, or white part) also goes to the backyard critters.

No it's really not that bad actually. It's a lovely place I live in, but there's always one who spoils it for the rest of us..... louts upstairs who are unemployed druggy losers who have no respect for anything or anybody. Meanwhile my neighbor, next to me is a very decent guy. But yeah I often see food come flying headlong out of the upstair's window.
