Brisket with hard bread isn't Israeli at all. Brisket is American Jewish style food.

The cactus fruit has an excellent flavor once you get used to swallowing the 100 or so pits in it which is not easily removable. Falafel is common everywhere and everyone says they make it the best. Schnitzel has been pan fried each time I've had it. Bourekas is not an easy find, but I did find in a an excellent bakery in Petach Tikva. Labneh (Arabic) is actually Leben (Hebrew) and it usually comes in a cup. It's really enjoyable if one likes bitter yogurt. Shishlik is Shish Kebob in the US.
