Just what part of the south is Wrightsville WI in ? No wonder you don't like southern fried chicken , Jeez .

Default They smoke everthing in the South

Be careful you don't buy smoked pork especially used to flavor greens which are good and good for you. Too much of a good thing will have you tasting only that smoke flavoring for days.

A post worth repeating here.

I had to visit a processor of Polish Gold Star hams in Polish Hill, Pittsburgh.

Knock, knock. No one there.

Turned right through the door of hanging plastic and saw hundreds of hams curing in a room turning on floor to ceiling spits.

Cool.

Looked around and the overhead sprinklers went off drenching me with liquid smoke.

Seems the Clean Air Act in Pittsburgh prevented this processor from using smoke to cure his hams so...

No difference in the taste.

the posted is right, chicken in the south has gotten pretty bad. Its now gas station food.

I have lived in Florida for 2 years now (transplant from Maine). We have found three local restaurants that sell delicious Fried Chicken with a light crisp batter.....it is fried to order so there is a bit of a wait...but Oh So Worth It!

I've had a lot of good chicken in the South but one standout is Parkers in Wilson, NC.
