I was just telling my teenaged daughter tonight that it's a shame she didn't grow up when her dad and I did, eating those glorious french fries cooked in lard. Does anybody else miss these delectable treats?

In England we called them chips .. and in some places they are still cooked in lard. They have the best taste

I mentioned this a while back on another thread but I'll mention it here too. I remember when McDonald's use to add beef fat to their french fry grease. They didn't advertise this fact but everyone seemed to think they had the very best fries and would try to figure out why. Then they took it out, I think because people found out about it, and their fries have never been the same. Once they switched to "healthy" canola oil, which is not healthy at all, their fry quality took a nose dive in my opinion.

You are right - I remember my Mom would by fries at McDonald's and then drive down the street to Burger King for a sandwich. They really did have good fries.

I don't recall McDonald's keeping their use of beef tallow a secret at the time.

I think it was for a long time, at least not well known, and then the story broke and people talked about it a lot. At least, that's how I remember it. I actually remember being in a McDonald's after they changed the fry grease and there being a big sign about how they'd be healthier now and then seeing the people make faces and almost cry when they tried a fry.

In retrospect, what I think is both amusing and sad at the same time is the new grease was less healthy.

I think what may have actually motivated them to change was they could buy the canola oil cheaper but of course the marketing spin was that it was for health reasons.

"Real" French fries are pommes frites and not much like our fried shoestring potatoes, which the French call frites americaines.

my mother use to cook french fries in hot oil, we loved them!!
