Only buffet-type places I'll go to are Sweet Tomatoes or Souper Salad. I only eat from the salad lines at both places, won't touch anything else. I'm a pretty picky eater and I don't eat out much.
When I used to be fat and ate whatever I wanted whenever I wanted, to me "all you can eat" meant exactly that. All you can eat. I didn't always clean my plate either. I ate until I was uncomfortably full.
I hear that diabetics or those with low sugar levels prefer buffets, as you can go in and eat right away, as opposed to restaurants that can take up to an hour before the food arrives.
I used to LOVE buffets when I was younger. I'd average 5 plates or so and then dessert. I'd be so stuffed.
Nowadays though I don't eat as much as when I was in my 20's, at least in one sitting. Plus my gag reflex has gotten worse so there's no way I could eat more than 2 plates at most.
So if the buffet itself is pricey, then it's not worth the money for me.
It means I can eat all the @#$%! food I want and only pay one price. I don't have to explain why I have so much on my plate, I don't have to stop at the tenth plate - I can keep going back until the restaurant closes.

And I ain't leavin' no tip.
I may not tip as much as I would at a regular restaurant, but I do leave a couple of bucks. They are refilling my drink and clearing my dishes after all.
Most of the Indian restaurants around here have a buffet lunch. If I go during the time they're having the buffet, I order off the menu instead. I figure it this way:
I can pay $9.99 and have all I can eat, right there and then, of some really delicious food, but I'd have to stuff myself to get my money's worth.
Or
I can pay $11.99 and eat half the entree, half the naan, all of the appetizer and crisps with sauce that comes with the meal, and a free gulab jamun or khir for dessert, and take the other half of the entree and half of the naan home for the next day's lunch.
To me, I get MUCH more of my money's worth by ordering off the menu. Buffets cater to the "I want it all NOW" crowd. I'm more of a "I want some of this now, some of that later" type of gal.
All I can eat is what is in the box that I bring to work with me. Today is has carrots, raw spinage, a banana, some nuts, and strawberries. That is all I can eat.
This morning all I could eat was a plain bowl of oat meal, no milk, sugar, or anything else. I also had a couple of eggs and a cup of chamomile tea.
Tonight we are celebrating my birthday because my wife works tommorow. I will be having a nice meal at a nice resteraunt. Havent decided what I want yet.
All you can eat for me is all I need to stay alive and nothing more.
It means I don't want to see a bunch of overweight people stuffing their faces. I don't go to all you can eat restaurants.
I know. It'd so much nicer if you could just to see the thin people doing it.
