I prefer whole WILD catfish, not farmed, pan fried, not deep fried.

While I like the taste of fish deep fried, I rather have it broiled or baked when I eat any. Which is not often as I prefer a vegan type diet.

Fish lightly fried without batter is fine. Locks in the fish moisture and flavor. The type of battered fish you get at Red Lobster and places have too much bread crumbs and not enough fish.

And people eat the heavily battered fish and dip it in so much tartar sauce, you can't taste the fish at all.
