As I understand it peanuts in a hot apartment can get rancid over time. What about peanuts in the shell? Or does the shell protect them in some way from getting rancid.

No the shell does not protect them. They still can spoil.

Hmmm... I agree they would still spoil because eventually the microorganisms would attack them. However, I think an interesting experiment would be compare how long it would take for peanuts inside a completely intact shell versus peanuts in a shell that has been cracked or has a little hole. I would guess that the intact shell would keep them fresher longer.

Keep them in the freezer, maybe? I put my pecans in the freezer when I buy one of those expensive bags.
