Being that I'm fairly critical of anything I make, there are a couple of recipes that will be do-overs (namely pot roast and shrimp scampi). While my BF and I did in fact eat 'em, they could be better.
Tried to make my mom's hash. I've asked her how to make it, and it never comes close to how she makes it. Ground beef, potatoes, onion soup, hot sauce, onions, and Worchester. Sounds easy right, well, I managed to screw it up. Now there's a whole bunch left over that we don't want. My DH said "what did you do different?" which is his nice way of saying "that sucked."
Some of the potatoes were either under cooked or soggy, the hamburger didn't have the nice crisp that my mom gets on it, way too much Worchester so it was kind of sweet and mushy, it didn't have that greasy hamburger-y crispy crust flavor that my mom manages. What a waste. I'm running out of ways to prepare red meat without a grill.
Could it be the pan you are using? A recipe like that sounds perfect for a good heavy cast iron pan.

That's an idea. I do have one that I never use. I bought it for one recipe and it never gets used but for that. It's worth a try. I just told my husband and his eyes lit up lol.
I was making chili and discovered that all of my tomato sauce was gone, so I tried using ketchup. It was an epic failure that my family still teases me about. Lesson learned.
One time I was making pancakes and I'm not sure if I didn't have a pan or griddle to cook them on so I poured the batter into a baking pan and then cooked it up. It was absolutely disgusting, including even adding syrup to it. I guess it is better with a smaller amount of batter.
I made a layer cake once that, shortly after I finished it, began sliding off the counter. I grabbed a big pasta bowl and caught it before it hit the floor. I looked a hideous mess, but my family still ate it. They said it tasted fine.
