Why? Potato naturally pairs very well with mayonnaise... 
It does not have to be plain mayo - you can mix it with ketchup, yogurt, lemon juice, curry, paprika ... etc...etc...

French fries and chocolate frosty=Yummy!
Marshmallows + anything = yuck!
peanut butter and bacon= yummy!
sweet potatoes and cinnamon= Yuck!
Fruit in main dishes like chicken, beef, pork= Yuck-only like fruit by itself or in desserts

I don't remember how I first became aware of this, but I like to snack on dill pickles and peanuts together. (I'm not pregnant.  )

Sweet + Meat = Yuck! Whether it's a sweet sauce or sugar/honey/maple glaze... just tastes like the meat has gone over to me.
Eggs + Sage or Rosemary = Yuck! Seriously, you can do many fresh herbs in a quiche or omelet, but not these two!
Cheese + Fruit = Yum! Cottage cheese & peaches, apples & cheddar, green apples & gorgonzola, melon & provolone, tomatoes (technically a fruit) & fresh mozz, figs & stilton, berries & brie, pears & marscapone
Lox + Cream Cheese = Yum! Doesn't even have to be on a bagel, add ultra-thin slices of tomato and red onion FANTABULOUS
Steak Fries + Mustard = Yum! (although I can eat fries with ketchup, mayo, buffalo sauce or brown gravy, too)
Pineapple + Clove + Ham = YUCK! I know lots of people adore this, but the combo of sweet pineapple and the overbearing medicinal earthiness of clove totally ruins a glorious ham for me.
Chili Pepper & Chocolate = Yum! A dash of cayenne in hot cocoa is divine, and ground smoked ancho chili powder in chocolate ganache tops brownies or angel food cake like a champ.
Mushroom + Crustaceans = Yum! Stuff a mushroom with shrimp, crayfish, crab or lobster and it's absolutely glorious.

Add cream cheese, black olives, and sliced mushrooms to this pairing and it makes a wonderful "California" sandwich!

Good - Rice&beans, pita and tzatziki, almond butter and dry tortilla, pineapple and rice, coco bread and beef, garlic and olive oil
Bad - Marshmallow on sweet potato, mayonnaise on slamon, anything sugary wit orange juice
