Celery is supposed to be one of the best foods to eat if you're on a diet, want more fiber, or just want the extra nutrition. However, you usually have to buy a whole bunch at a time and then I have trouble finishing it before it goes bad so I'm looking for new ways to eat it.

How do you eat celery?

It makes a wonderful rack for roasting chicken and flavoring the subsequent gravy.

For eating raw in salads or stir frying, break a rib near the root end but not all the way through, pull back to remove the toughest strands, then chop to the desired size.

Use it as a dip for salsa instead of chips.

Well, this is not a diet thing, but I had an Iranian friend who would slice a lot of celery in thin slices and fry it 'til it got a little browned. He made a beef stew with this as one of the main ingredients. It was super yummy! I use fried celery in my beef stews sometimes.

Try dipping it in hummus or black bean dip.

Soup, stir fry, in egg roll filling. I don't like it raw though.

When I make a soup or stew with celery, I include the leaves. They taste so good.

Default I use celery a lot...

Along with onions, I saute sliced celery for beef stew, spaghetti, chili, southern style chicken and dumplings and soups like clam and corn chowder.

For cold dishes, I add it to tuna, regular chicken and Chinese chicken salad.

I'm editing to add that my mother told me to use this "trick" to preserve celery longer which is done by wrapping it in foil before storing in the fridge. See this link:

I like celery steamed. In fact, I just had a very delicious steamed meal consisting of celery, chard, mushrooms, kale and yams; all prepared in a slow cooker.
