Pasta salad - I make many kinds, such as "deli counter rotini," chicken, pesto, and cherry tomato farfalle, penne with yogurt-herb dressing plus loads of raw veggies, mini-shells with bell peppers and a Parmesan vinaigrette, and macaroni confetti salad.

I keep a good pasta salad going all summer. Sometimes with chicken or ham, never with hard boiled eggs and sometimes with pickle relish. it wouldn't be summer without pasta salad at my house.

Plain old fresh-squeezed lemonade with sugar is about as refreshing as it gets in hot weather, however simple. If you want it to have a little more lemony flavor, put pieces of peel in the sugar for a half hour beforehand ..... it draws out the lemon oil so it can mix into the drink.

Sometimes in the summer I get a serious hankering for beef, bean & chicken nachos with extra jalapenos and plenty of pico de gallo. Or sometimes just a couple of tacos with hot sauce. I definitely like spicy food more in the summer than the winter. Maybe I was a Mexican in a former life or something.
