For some reason, I myself appear to really like raw beets, such as these:

They don't look raw. But anyway, raw beets are too hard for my tastes. Roasted is my favorite way to enjoy beets.

DH and I buy every week raw red beets and slice them up in our salads,sometimes I add to the red beets onion slices,salt/back pepper,olive oil and white vinegar.

My bad--I meant to ask about marinated beets but mistakenly wrote "raw" instead of "marinated".

That picture appears to be accurate--these appear to be the type of beets which I ate yesterday.

Roasting brings out the sweetness of the beets.
I also enjoy marinated and pickled beets.
