Rice, ro-tel tomatoes, and nacho cheese sauce are a good combination. I used to add chicken but it would be fine without. You might be able to sub cauliflower for some of the rice, but it needs some rice to keep from being too gooey.

Is fish an option? Fish, cheese, bean sounds good to me. I'd put the fish and beans inside and the cheese on top, with Verde sauce.

The cafeteria chefs at my work make a Mexican lasagna with black beans, loads of cheese and corn that's out of this world.

I make mine with sauteed bell and jalapeno peppers/onions, mushrooms, beans - usually a can of refried, and I have put sauteed carrots (I cut them into matchsticks), and, honestly, any other veggie I come across. I chop up tomatoes and put it on top of them.

So good - my oldest son is obsessed with them!

Spanish or Mexican rice with the refried beans and the enchilada sauce. I don't do vegan - but I frequently use ground beef and mix with mexican rice to stuff ours and then I add some onion and spices, etc. They're pretty good!!!!

Yes, it does. But it's delicious! I've cooked from scratch for years, made my own tortillas, my own bread, pizza, yogurt, jam, etc. Now and then, though, I find a need for something quick and tasty that doesn't take hours of prep work or a trip to the store. That's how I came up with that combo for enchiladas and it's been a family favorite (with the chicken added also) for years. I can't eat enchiladas anymore, but I still get asked to bring them to family gatherings and parties.

Maybe if you made the cheese sauce from scratch - I think that canned cheese sauce is foul.

You could probably get the same effect from melting some Velveeta and adding the liquid from pickled jalapenos. I make cheddar cheese sauce from scratch for other things like macaroni and cheese but that wouldn't work for the enchiladas.
