So I made sweet potato and black bean enchiladas the other day and my housemate was amazed at how good they were. I was amazed at how easy it was to just pull them together.
I'm trying to think of nontraditional fillings (as in, not ground beef or chicken and preferably vegetarian) and I'm having a hard time with it.

Yes...I love these Black Bean and Spinach Enchiladas, this is where I found them and they have a great variety of other combinations as well. They are absolutely delish-US! It's late but if I had some in the freezer I would SO take them out and heat one up.
Also, they have some great recipes for homemade enchilada sauces as well.
Sweet potato and black beans....Shouldn't knock it til you try it, but, I'm not trying that. Cheese and onions, yes! Of course there's enchiladas verde. As for all veggie I could almost do pico-de-gallo in a rolled corn tortilla. Maybe with some avocado.

How about grilled eggplant brushed with olive oil... perhaps turned into baba ganoush. I'd be tempted to try it with sauteed onions, cilantro, and a little lemon.
I had awesome avocado enchiladas with a cream sauce instead of a traditional red enchilada sauce at a restaurant in Phoenix. Probably a recipe for them on the internet somewhere.
