This is the same concept as cutting a melon in latitudinal sections instead of cutting longitudinal wedges right out of the side of the melon. It's easier to wrap a flat slice than one with an angle.

Doesn't work as well with pies.

Besides, who saves cake? That cake should be eaten.

Terrible way to cut a cake. Who is going to put a rubber band around a cake with soft icing ? This is a case of scientists that over think things.

The scientist is British, and cakes in Britain have traditionally been a rich fruitcake covered with marzipan (to prevent the fruitcake from seeping) and royal icing. The royal icing dries very hard. So the rubber band method would work for a cake like that. It makes sense that the method is 100 years old, because cakes have been that style in England for a long time. It's only in the last 20 years or so that using fondant instead of royal icing has become popular (and using Madeira cake instead of fruitcake), which led to the trend of using fondant here.



For a typical American cake, a rubber band would not work, but just covering the cut side with press-and-seal wrap or plastic wrap helps to seal in moisture and keep the cake fresh. We also don't keep our cakes for as long because they don't keep as long as fruitcake.

Two words: Dental Floss.

There are plenty of vids that show you how to cut a cake with string. Even a layer cake cut can be done very easily and rapidly with string. No need to manhandle your cake multiple times with rubber bands and touching with fingers.
