I usually like a fatty cut of steak, so I grill or broil rib eyes to medium rare.

If I'm grilling or broiling a filet mignon, I like it rare.

Medium rare - I think that's how most people like it, too bad this is not a poll.

I like burgers anywhere from raw to well done, but can't get hamburger fresh enough to eat raw or rare with confidence, so I usually make them medium well done.

It depends what it is, but steak on the rare side of medium rare. Beef carpaccio is one of the most delicious things I have had the pleasure of eating.
