Favorite steaks are ny strip and london broil (I believe top sirloin but not sure).

Medium-rare to rare with a side of baby spinach (cooked or uncooked) and a tablespoon of steak sauce.

All other meats well-done.

Depends what I'm consuming with it. I mostly go for a medium-rare steak almost always. If I have nice pinot noir I'll maybe go for a medium-well as the palate likes that a bit more (hearty steak with less dry wine...mmm). When drinking dries I'll take medium-rare.
