the only time we peel new potatoes is 1-if we are making potato salad or 2-creamed potatoes and peas or something like that. We sometimes leave the skins on when doing potato salad, depending on what kind I am making.
Peeled potatoes have a flavor very different from unpeeled. I peel them almost all of the time. I definitely intend to try that method on both new and old potatoes. It would be difficult in the winter, however. That's my main mashed potato season.

Just scrub the grelots, boil and serve with lots of butter and parsley. Delicious!
