Something popular but painless to make is grilled corn halves on sticks. You can do a smear and sprinkle with Cotija, feta or parmesan. Add color with a bit of smoked paprika. If prepped in advance by necessity they're good at room temperature and I think even cold.

For something with more substance, Chinese chicken salad. I like chipotle raspberry chicken wings. You can call them firecracker wings. Pinwheel sandwiches. All make-ahead. Vegetarian lasagne is always welcome too. Use Thomas Jefferson's recipe for mac and cheese.

If it's dessert, honestly just big wedges of melons.

What I think is really special is a summer spritzer, non-alcoholic. People usually end up with water or soda pop. But you're at a potluck tasting new things and the beverages--you're putting that in your mouth all the same--is nothing you don't have every day of the week.

id make some fruit kabobs- watermelon, grapes/sliced strawberries/blackberries/raspberries/tangerines/pineapple
alternate on a wooden skewer- easy to eat and eye appealing with all the colors

Um, these store bought brownies aren't very yum, but the box is fun. I suspect more people buy them for the box (me!) rather than the insides...so they're still special! What did you folks think I meant?
