I ask because I contacted Jeni's Splendid Ice Cream (they dont put expiration dates on their pints) and they said after you open it, it expires within 2 weeks.

I thought Ice Cream expired usually around 6 months to a year.

Ice cream does not "expire". It merely starts to get all crystally and tastes like freezer burn.

Read up on what those dates on food cartons really mean .... Most of them are nothing but CYA measures by the manufacturer.

I really never think of it expiring. It does get icy after a while, but it is still edible. tasting a bit different and not very good if it starts to get crystals or starts to melt would be a reason to toss it. We usually do, but I don't think that is the same as expiring. I think of expiring as meaning it should no longer be eaten.

If you open ice cream that you will not be able to eat for a while, take a piece of plastic wrap and push it against the surface of the ice cream. That tends to keep it from crystalizing.

The plastic wrap as suggested does help but a pint doesn't last long enough to go bad in my household. That is one of the reasons I buy a pint because I know that it won't last long enough for freezer burn.

As a matter of fact, I just bought a pint of Gelato - Tiramisu.

I've eaten Jeni's ice cream. I can't imagine it sitting in my freezer two days, let alone two weeks.

How does ice cream last long enough to spoil?

It will get crystallization and freezer burn. Also, it can pick up odors.
