A few places I know specifically mention using beef tallow or duck fat for their fries. If a meat free oil is used it would be peanut oil, since it has such a high smoke point.

Typical vegetarian options would be things like salads, pastas, roasted vegetables, and baked goods.

Cooking with animal fats was VERY COMMON up to the 70s. I think that McDonalds did not switch to an all vegetable fat until the early 80s.

Many of the Mexican restaurants in Chicagoland till use lard in their refried beans and many of their pastries.

Their was some curtailment in the use of animal fats in WWII as they were rationed. However, those restrictions applied to both animal and vegetable fats. A good amount of military equipment was lubricated using rapeseed oil.

The key word is "can usually." One of the latest culinary fads is to cook french fries in either tallow, lard or duck fat.
