My boyfriend's dad is one of those no carb freaks. He substitutes mashed cauliflower for mashed potatoes. I think it's a shame to mash cauliflower. I love the nature texture of whole cauliflower. It's part of the pleasure of eating it.

Ewwwwwwwwwww!!! Spinach in a can isn't spinach!

For me, I love ALL veggies except for turnips and parsnips. Anything else is wunderbar!

I like all veggies...some more than others. No one has mentioned squash! I love to saute zucchini and summer squash in a bit of olive oil and butter with maybe some bread crumbs...or mushrooms..maybe a bit of onion. Season with favorite spice and you have a nice, light side dish.

Mashed turnips can taste like mashed potatoes, almost. So they are pretty good if made right. I love fried okra, being Texan! Also sauteed kale, with a mix of Bragg's Aminos, olive oil, a little vinegar and toasted sesame seeds, is very delicious.

But I'm still trying to figure it out.

I'd hate it if someone handed it to me. You can't eat it raw. It's like a big piece of dried foam.

At the same time, mnay cultures have turned it into something magic. Fantastic in Italian dhishes. Brilliant in Chinese. But it's also tricky to cook. Too soon and it's hard foam. Too late and it's mush. Moisture helps, but water takes a while and oil makes them too hapy to the point where they melt.
