Ok I just bought 4C Plain Bread Crumbs (atop the bread shelf). I'm totally surprised at the looooong list of ingredients for such a simple thing as plain, bread, crumbs.
Its not like they can just list "bread crumbs" as the only ingredient. They have to list all the ingredients used to make the bread crumbs. I would think the ingredient would be similar to those in a commercial bread product like bunny bread.
Although their website lists it as follows, the list on the package I bought is apparently much longer, and in addition to the following, also has "NONFAT DRY MILK", and some other extras, so the list below (from their website) is not exactly the same as on actual package.
The milk is from the bread. That list is what enriched bread is and is actually a bit shorter. I bake bread and it's why I make my own breadcrumbs. I know it was posted a few times in this thread but making your own breadcrumbs is throwing a few slices toasted or not in a blender or food processor, blend. Done. If you don't have a blender/processor. Toast bread, let it cool off completely. Hand crumble it or put in baggie and crush it thoroughly.

And you're surprised by these ingredients? They're bread crumbs... made from bread... pick up a loaf of store bought bread and you'll see a similar list.
which is exactly why I vowed a few months ago to never buy bread again. My breadmaker is used for rolls, hot dog and hamburger buns, everything with dough. I know exactl what's in it but more importantly what's NOT in it.
All those chemicals are for shelf life. We call then Flavor Crystals at our house when we can't pronounce ingredients listed.

There is nothing in that list that is hard to pronounce.

Thanks for the tips for eggplant. I tried a couple times frying in a pan and they were successful (flour, then egg, then breadcrumbs). Only thing is I used a lot of oil and it was all absorbed, meaning ended up in the stomach... Next time will try oven baked without much oil.
Oil is not bad if the oil is good. I still fry them.
