Huge apple harvest this year. Put up the normal amount of sauce, butter, pie filling, etc... but still have tons of apples left.

I have looked at several on-line directions for making apple presses and so many seem pretty complicated and bulky to store in the off season. I have an idea, but wondered if anyone could elaborate or advise on it...

Two planks (16"x24") of hardwood held together at the end with large hinges. It would look like an opened book when laying flat on a table. Grind the apples up (quartered and food processed) and place in a zip-closed mesh bag. Lay bag on plank and fold the other plank over on top of it. Apply pressure to the top (not sure what method I'll use, but a bottle or scissor jack under a simple frame seems best). Place the whole thing on a table at a slight tilt and place a collection vessel at the end (I'm actually thinking of using a plastic window planter box for this because it would be long enough to span the entire end of the planks. Drill holes in the end of the planter box and angle it toward a bucket.

What am I missing that will make this not work?
