im hosting 16 people for the first time this year and plan on using chafing dishes. if i place sliced turkey in one, will it dry out?? or should i add a little broth in the pan?
Good point. I have a wire rack insert with little feet that I place meat on. Little broth like NK suggested above on bottom. Meat stays moist but doesn't get soggy.

Also be careful to not take the stereo lid completely off because it will heat the pan quite a bit and help with the drying out. I made that mistake for my daughter in law's baby shower and actually burned a rice dish.

LOL, I'm thinking you mean STERNO lid? I've heard of cooking things on a car engine, but never on the stereo.

What you forgot was the water pan below the food pan. True chafing dishes have both.
