in the US carbohydrates are calculated 'by difference' meaning they take the weight of the proteins, fats, and water out and anything left over is by definition calculated as carbohydrates... so any cultured product where the lactose might be consumed, this might not be reflected in the carbohydrate content listed on the label which in fact is overstating the carbohydrate content...
