This is my (full Scandinavian) dad alllllllll the way. The dude is literally the definition of a "meat and potatoes" eater. Pickiest eater I've ever known in my life hands down.
But I have to say that the most basic form (white bread and slice) is quite nice, if you do it with lots of butter. Some times I do fix one up.
Does a quesadilla with two corn tortillas and melted cheese in the middle--prepared the same as a grilled cheese sandwich count these days? LOL. Since moving to Mexico, I have adapted to the more common, local ingredients here. Corn tortillas with melted Oaxaca or Manchego cheese between 'em. Mmmmm. BUT I definitely do love the good old-fashioned grilled cheese sandwich! I made a true grilled cheese sandwich one day for my sweetie's little 5-years old niece--and she LOVED it. She had never had one before (she's used to tortillas, of course!). Now--she comes to see me at least three times a week (they live next door) asking for un sandwich rostizado con queso amarillo (a roasted sandwich with yellow cheese)....so cute!
I have heard about doing the mayo on the outside which I think could really work. Growing up my mom would put mayo on the inside of the grilled cheese. Now I like mayo on a sandwich, but this is not a good food combo. May on the inside. Thumbs down Mom, I'm sorry.
As a student in Ireland, I often went to a pub for lunch that served up "toasted cheese." It made me appreciate one made with good cheddar, and inspired me to often incorporate thin slices of grilled tomato. I DON'T like a slice of raw tomato put in the sandwich pre-grilling, though. The tomato slice needs to be grilled on its own first. It makes a differences.
Rye bread, slice of tomato and Velvetta, with a bowl of Tomato soup to dip it in.
I forgot how good grilled cheese tastes when made with rye! If using white bread, dipping the buttered slices in grated parmesan cheese before grilling makes a nice crunchy, cheesy crust on the outside of the sandwich.

Sounds good but I no longer use butter to grill my grilled cheese. Have George Forman grill and just spray a bit of PAM on it
