We almost never have soup, or think of eating soup, except for beef stew, chili, turkey soup and pea or bean soup. The last two instances are generated by the Thanksgiving turkey, and the Christmas ham.
We like soup, but we just aren't in the habit of eating it.

After we finish off most of the meat off the Costco Rotisserie chicken I take the leftover chicken and chop it up and make a nice chicken soup out of it with some additional veggies. I don't let food go to waste.

This. I usually make vegetable or chicken & vegetable soup. I don't eat much starch, so I leave out the noodles.

I love soups and stews in any form. I just made a huge pot of chili for a pre-Christmas dinner with family and friends and it was a huge hit. I like making soup because it's easy, cheap and you can throw in as much or as little of any ingredient that you like.

I do the same thing and use the carcass for homemade stock.
