I am making home made tacos, with home made refried beans, and all the trimmings including margaritas!

That's sounds really good about now. I am jealous!
It is very nice weather here today. Mid to high 50s and very sunny. For some reason this is making me think ordering a pizza is a good idea. Pepperoni for the kids and I will order a small artichoke pizza for me, my husband is in New Jersey again so he can eat whatever he darn well pleases!

Isn't this crazy? Last week we had 2 snow storms, and this week we've got the windows open!

Rigatoni with tomatoes and eggplant and a tossed salad. This was a huge hit last week, so I'm making it again.

That sounds really good! Are you a vegetarian? I'm not, although I am eating a LOT more veggies and somewhat less meat/poultry these days.

Tonight (or rather mid-afternoon as I got up around 4 a.m. today ) I had a baked chicken thigh (no skin but rosemary-garlic seasoning and thyme added) with half a plateful of fresh stir-fried veggies (today's were carrots, green beans, leeks, mushrooms, and sweet onions). I cooked the chicken thighs (I have 3 left) on my Pizza Pizzazz again and it worked great. YUM!

I was going to make Chicken Divan until I discovered Son had eaten all of the leftover chicken. Now I haven't a clue. I guess I will concoct something with ground beef and rice or pasta.

A strawberry banana Greek yogurt, 3 toasted high fiber/protein slices of bread with healthy-style margarine & strawberry preserves and a mug of tea with a teaspoon of sugar.
