I am going to throw some leftover roasted asparagus, red onion, bell pepper, mushrooms, and butternut squash into the food processor, fry it up as a hash and serve aside a bacon and cheese omelet for husband for dinner tonight.
I have a small piece of leftover salmon that I'll toss into a Caesar Salad for me.

Chicken burgers stuffed with spinach and provolone, also having red beans and rice. I am actually going to grill outside for the first time since October.

I have some sliced pork ribs on the bone....in a beer brine.....will cook on grill (indirect heat) later and have rice and cole slaw on the side. I will try to forgo the rice...due to being on a diet and close to my daily caloric limit.

We roasted a chicken last night, so tonight is using up the leftover... make up some orzo and mix in the leftover chicken cubed, artichoke hearts, fresh spinach, some crisped pancetta, toasted pine nuts, and sauteed onion/garlic/red pepper flakes.

I'm making grilled chicken sandwiches with bacon, cheese, lettuce and tomato (and mayo for the hubby, BBQ sauce for me) on Texas toast with tater tots.

My 97 year old godmother, a close friend and I are spending the entire evening making hors d'oeuvres for tomorrow night in celebration of my becoming a shareholder at my law firm (I don't practice law but I've been their patent agent for 8 years now) for approximately 30-40 people. My husband's contribution will be supplying all of the liquor and his brother will act as bartender. I'm trying not to make too many cheesy snacks or I'll constipate everyone!

Avocado Egg Rolls with chipotle-ranch dipping sauce
Spicy Korean-style meatballs
Caprese salad bites
Mini shrimp rolls
Cranberry-Brie bites
Deviled Crab in a large bread bowl (sort of my main dish)
Havarti/rosemary and tomato mini quiches
Crispy Asian chicken wings
Baked zucchini fries with marinara dipping sauce

Mini peach cobblers with bourbon whipped cream
Mini cherry cheesecake bites

and lots of liquor!
