Grilling out tonight: burger, asparagus, corn, potato salad made with a vinaigrette instead of mayo, green beans, and Kaiser rolls. Unsweetened iced tea to drink. Angel food cake with strawberries for dessert.
We have lots of boxes of matzoh crackers (DH is a non observant cultural Jew, who bought a bunch of matzah crackers when they went on sale after Passover)
This happens a lot. A few years ago I read a recipe that I use when I find my self in this position;
Matzoh Lasagna. I just use matzoh crackers layered with cottage cheese, mozzarella cheese, Parmesan cheese and Paul Newman's Sokarooni sauce.
I'm tossing a big salad with a lemon garlic vinaigrette. Making a loaf of garlic bread.
DH just came in from a day of working in the yard and he's sitting in front of the TV eating hamburger/black bean dip and Scoops. That should about do it for his appetite. Looks like he's in grazing mode. I've got steamed asparagus and broccoli in the fridge and will try to coax him into a dish of one of those as well.
I've been putting together two pans of chicken enchiladas - one to freeze for my bachelor son and the other for us - which I'll finish up tomorrow. So I'll probably just grab some of the chicken from that and have a sandwich and a dish of asparagus. Maybe peel an orange for desert.
Johnny Carino tonite. Roasted garlic potato soup, chicken Marsala with sautéed spinach, warm bread with olive oil, Italian chocolate cake with vanilla ice cream
Leftover night here. Tomorrow will be grilling some lamb and whatever else pops out of the freezer.
