Tonight we have Prawn Pulao ( Jhinga Pulao) and (roasted cumin ) lassi. For dessert 1/2 a pink grapefruit.
1 cup Basmati rice
1 chopped onion
4 tbsp butter ( I use today ghee)
1 inch cinnamon stick
1 bay leaf
6 green cardamons
6 cloves
2 tsp fine diced fresh ginger
2 tsp fine diced garlic
8 oz large cooked shrimp
1 tbsp chopped fresh cilantro
1 tsp garam masala powder
2 fine diced green chilies
salt to taste (3/4 tsp or as you like it)
Fry onion until golden brown,add cinnamon,bay leaf,cardamons,cloves and fry for 1 minute. Add ginger and garlic and cook for 1 minute more.Now add shrimps and sprinkle with cilantro and garam masala,adding green chilies,salt. Stir in soaked rice and the 2 cups of water. Mix well and bring to a boil. Next reduce heat,cover and cook until rice is tender (about 10 to 15 minutes). I never stir while it cooks. We serve it with
yogurt raita ( dahi raita) made from homemade yogurt,fine diced onion,salt to taste,2 to 3 green diced chilies and fresh diced cilantro.
Tonight will be make your own shredded beef tacos. I will make guacamole and lime cilantro rice. I will shred cheese. I will also offer a choice of black beans or refried and dice up some onions. I am sure I will put out a couple other things but I am drawing a blank right now!
