I'm still pretty well out of commission, so my husband will be making dinner again. Today, I'm teaching him how to make his all time favorite chicken type casserole. It's really easy:
Spray a baking pan (8x8) and preheat the oven to 350.
Wrap 4 chicken thighs in 2 pieces of prosciutto each and put them in the pan.
Mix 1 small carton of sour cream with 1 Can of Cream of Mushroom Soup, pour over.
Cover with foil.
Bake for about 40 minutes, covered.
Uncover, stir the sauce around a bit, and bake another 20 minutes or so.
Serve over rice (it's the boil in bag rice - he knows how to do that already)
He can't drive, so I agreed to drive him to the store, and give him a detailed list of what we need (not much - prosciutto and sour cream and a few other non related dinner things) and then supervise as long as he went inside and did the shopping.
Scallops Gratin, and a big salad. I finally am able to try the actual Gratin recipe with Crème Fraiche. It is hard to find around here, so I've only made it with mayo before.
Tonight boiled potato,butter and creamed cottage cheese with red onions,caraway seeds,black pepper and salt and a tomato and parsley salad. For dessert 1/2 a pink grapefruit and later fresh baked Florentiner cookie with a cup of Darjeeling tea
WEDNESDAY: I'm making a huge crockpot of gravy, meatballs and sausage to serve over rigatoni topped with fresh pecorino/romano cheese. Warm crusty bread with seasoned olive oil and a big spinach/green salad.
That sounds wonderful - it's one of my favorite meals.
Our granddaughter who seems to think we will starve without her supplying us with all her left overs brought us a huge ziplock bag of sausage pasta casserole she had made a few days ago. I am heating it and making a green salad. She really is funny, they eat no leftover so she seems to think it is her reason for being on earth; to make sure the old folks eat right.
I have a friend coming over who is a native Coloradan, never visited the real world, so I'm making fried chicken and waffles, fried okra, mashed potatoes with country gravy, corn bread, ice tea. I would have a crawfish boil, but I don't want to scare her off just yet.
Taco Pizza, by request. Will also get started on a pot of Navy Bean soup for the crock pot tomorrow.
