Default Last week Friday...

Last week Friday was my last day working for my former department and they threw me a farewell luncheon at an expensive restaurant. Some of the gifts I received were 2 fifty dollar gift cards to a fine dining restaurant called, "3660 on the Rise".

Because I presently do not have a partner, I elected to share my good fortune with my parents who are always there for me and will always have my back. I'm glad I did because they enjoyed themselves immensely and told me because they are now in their late seventies, they don't go out to fine dining restaurants as much as they used to.

For my appetizer I had broiled oysters with a hollandaise sauce and one oyster on the half shell with a citrus sauce topped with tobiko (flying fish roe).

For my entree I had a duck breast which was roasted to a medium rare (on the left), a potato mash which incorporated some of the duck meat in it (in the middle), and a confit of duck leg which was deep fried for the last few minutes to crisp up the skin (on the right). It was all served with an orange sauce.

For dessert I had what was called on the menu as a "symphony of desserts". On the right is a creme brulee, in the middle is a chocolate souffle cake with a scoop of french vanilla ice cream topped with a caramel sauce and a chocolate tuiles, and on the left is their version of strawberry shortcake.

The food was out of this world delicious! While all of this is good, I reminded myself that the most important thing is I was able to get a higher GS position with another department at a time when the federal government is going to downsize the army's presence in Hawaii. Some estimate over 20,000 soldiers will be cut and removed from Schofield Barracks in the town of Wahiawa which could adversely affect the local economy there.

last night at my SIL's we had, spinach dip, guacamole and onion dip all homemade with tortilla chips and potato chips and assorted raw veggies. For the dinner she mad fresh green beans saute'd in garlic and oil, roasted potato wedges and chicken breasts that were topped with mozzarella, mushrooms, parmesan cheese and onions with a white wine sauce on top and baked in the oven. I will get the recipe from her. for dessert we had spice cake with cream cheese frosting. Tonight's dinner is shrimp cocktail, honey bbq wings and a buffalo chicken dip thanks to another CD member.
