I was raised to make a starch and a side, but I don't often do that anymore. I generally do 1-2 sides (depending on how hungry I am); one will be a veggie, and the other will be another veggie, or a fruit.
I love carbs but I really needed to cut back on them to get my weight at a healthier place.
Generally, it depends in what i am making but i always have one veggie side. Sometimes 2 veggie sides. And depemdeing i'll have a starch side. Sometimes i replace the starch with beans.
Tonight i am making beef curry and serving it over quinoa. I had carrots as my side.
I am shooting for green veggies + another veggie at dinner but today i loaded up on brussel sprouts at brunch so it felt covered.
1-3. usually a starch or pasta plus a vegetable. sometimes just one side if i combine the starch and vegetable into one dish. sometimes 3 sides if im feeling it...like i'll add some fruit or something.

i just keep the starch serving size small (like a half cup of pasta or a slice of bread) and that seems to work. but i feel bloated and gross if i eat too many veggies all at once.
I most often have 2 sides, a starch ie carrots and a green vegetable or one veggie side and salad. Focus on veggie color for health benefits, red and orange, dark greens. But too many sides = too much cleanup
