I love Pepper Jack Cheese, too. Anyone else?
Without the spicy pepper, isn't the Monterey Jack Cheese be very close to Swiss cheeses because it's quite mild? without the holes, of course.

No....Pepper jack is not just swiss chess with peppers. Jack cheese...or monterrey jack is not a Swiss-like cheese at all. They maybe both milder (though some really good swisses can have bite)....but that does not make them the same.

I like aged cheddar and swiss, I mean aged to where they have that crunchiness to them and break apart in your hands... for cheddar that usually takes around the 7 year mark... I had the best swiss ever last Christmas visiting Wisconsin and visiting a cheese factory.

I found some great interesting cheese selections even at my local Woodman's in Sun Prairie by Madison. Everything in moderation

You can find some surprisingly good cheeses in supermarkets.

Woodman's has about 10x the selection of cheese found in the average US supermarket. Most of it is sourced from the various dairy cooperatives in Wisconsin. It is a great place.

Woodmans is an above average grocery store....but it doesn't have that interesting of a cheese selection.....just good quality standard choices.

Try Cheesers in Stoughton or any of the independent cheese/meat shops in the area.

7 years? Cheese crystals form in cheddar between 6-12 months.

I would be down to try some seven year old cheddar, though :-)

I love cheese! My latest find is Creme de la Coulee St. Jenifer (semi-soft washed-rind cheese) from Wisconsin. My all time favorite is Uplands Rush Creek Reserve, but they didn't make it this year. I've eaten that with a spoon. I am also a fan of Carr Valley Cave Aged Marisa and Uplands Pleasant Ridge Reserve. Some of the grocery stores in Wisconsin (Willy St Coop & Metcalfes) sell really small pieces of cheese so that you can try a variety. Carr Valley cheese store does this, too.

I am not big on cheddar or mass market Swiss. I even picked up a small piece of 15-year cheddar at the grocery store. I paid $10 for this tiny piece of cheese because everyone was raving about it. I thought maybe it would get me to like cheddar, but I only thought it was OK.
