This article explains the science behind bread boxes. It's meant to be a controlled environment that keeps the moister from escaping too fast but the loaf creates some humidity and the vents in the bread box lets just enough moister escape. It also has some interesting tips. Good read.
yes, i use a bread box, but mostly it's just to keep the bread from being crushed or taking up too much fridge space. And I put other foods in the box too, like big gallon bags of bulk bin rolled oats etc. Also, you can stack things on top of it. In other words it doesn't subtract from your counter space and it provides out of sight dry food storage. Besides mine is a cool old vintage wooden one with a rolltop door. I like the look of it.
for my climate, the big problem would be with bugs-- and a wooden or vented breadbox might not prevent them entering ( i keep everything inside sealed up tight).
One problem that I found, when we had ours, was that bread got forgotten in there sometimes for extended periods of time. I would remember I had put some bread or pastries in there and when I pulled them out they were stale. Now I just put my bread on top of the toaster and I always am reminded to use it or toss it when it gets older.
We had a bread drawer with a tin liner, growing up, and so did my grandparents' house, but they don't seem to be standard anymore with contemporary cabinetry. I think they are a throwback to a time when house mice were more prevalent, as the tin lining formed a mouse-proof barrier.
Oooh that's a really good idea actually. I have a surplus of drawers in my kitchen so I am going to see if hubby can retrofit one of them into a bread box. He did others for me as a knife block, wrapping station (foil, plastic etc) and etc. I never knew they had a bread drawer, great way to save counter space too.
Ok, well here goes the big bread box experiment.
It is indeed a Brabantia, made in the Netherlands. It is stainless steel with plastic sides.
I got a loaf of standard torpedo-shaped French bread, baked about three hours ago so pretty fresh.
Made a prosciutto sandwhich and put the rest of the loaf without any kind of wrapper in the bread box.
