I bought a "choice" grade rib eye roast for 6.99lb on sale , it was a bone in roast
I roasted it to 125f internal degrees, let it set for 20 minutes, and it was delicious
but yes, rib eyes that were 6.99-7.99lb two years ago, are now 8.99-12.99lb for choice, some places are 16.99lb
sometimes I do buy select grade because it is rib eyes and if not overcooked, it is still very good , if it looks a little lean, I will use my hand tenderizer (jaccard) this with ensure its tender

Here in M.I.A, the Ribeye was 30.00 including taxes, but now they lowered it to 27.50. It's best if you eat it in a street restaurant, it's 10 dollars less.

Lowe's foods on Valentine's day had thick black Angus ribeyes on sale for 6.99lb. The couple in front of me bought 2 and when they said the price was $19 total I was sold.... the only thing I'd do different is let it set in the fridge till it starts to turn Brown instead of fixing that day.
Usually rest in fridge 3 -4 days then on the counter the morning of. Steaks cook better at room temp then fridge cold.
