I think I would love colcannon, but I've never made it (or had it). It's just potatoes and cabbage, right? There's an awesome sounding recipe on the Food Channel site. It has ham in it too.
Knowing your taste in food from City Data, I think you would love it! Here is a link. I have never heard of using Kale. I use cabbage. If you want a specific recipe, I have one. There are others online.
Hey, you gave me an idea. This is my first St. Patrick's as a vegetarian, but when in London in November, I had a potato, mushroom, and ale pie. It was soooo good. Maybe I will make that!

I might do a cottage ham boiled with cabbage, green beans, and potatoes this weekend. I don't know how Irish it is (certainly more Irish than corned beef ) but my Irish-American grandma used to make it all the time.
