The only kind I knew growing up were made from coconut, but I learned they were originally made with almonds. In fact, I made some almond macaroons once from almond paste and egg whites.

I LOVE macaroons! Since I am originally from suburban NYC, supermarkets were filled with them at this time of year - they are a sweet with no flower and they are popular during Passover season.

Some are still made with almond paste (marzipan). There was a wonderful variety of macaroons - coconut was my favorite, but dark chocolate are delicious.

I should try making them myself.

Love them! Even the chocolate covered ones! I made them once but they came out like crud. I forgot to bake them on parchment paper.

Only the ones I make. Cannot stomach the ones in the cardboard cans. They get requested for Passover Seders.
