Is raw horse meat exotic? Someone tricked me into eating that in Japan. Also, shark cartilage.
I forget the native name, but try strips of horse fat in a "soup" of fermented mare milk... Kazakh staple...worth the trip as we could get saffron for 5 US a pound.
Horse meat is still pretty common in a lot of countries. It actually makes great salum and slinzega.
Conch chowder is yummy!
Baby eels in garlic sauce (Taiwan) Tasty, as long as you don't look at what you're eating.
Rabbit Tasty.
Venison Yummy.
Poached giant eel (Finland) Good.
goat Kind of meh. Can be prepared many ways; stewed in various sauces, or as taco meat.
duck, duck eggs Duck is much too fatty for my taste.
Buffalo (ordinary, these days, in the SW)
Reindeer (Alaska, Sweden, northern Siberia) REALLY tasty! Should be marketed more widely. Good as hot dogs, & sausage meat for sandwiches. No fat.
Quail (California)
Guinea pig, aka "cuy" in Quechua (Ecuador) Very boney. Can be good depending on how it's cut and prepared.

I've always wanted to try kumyss, fermented mare's milk. It's rare, even in the regions where that's a precious delicacy. How was it?
The earliest Indo-Europeans to migrate into Europe (Balts, Germans) drank fermented mare's milk.
Bear fat is considered to be a powerful medicine all over Russia. I had a great-aunt who cured herself of TB after the siege of Leningrad (St. Petersburg) by eating bear fat. She said she mixed it with coffee grounds and chocolate in order to be able to choke it down. She swore it saved her life.

It was, well, different. Sour with a bite from raw alcohol tough not like a shot, the mouth feel very thin like skim milk. It wasn't horrible, but not something I would go seeking out. Perhaps one of the strangest beverages I've had the chance to experience. The family/company made it far more enjoyable than if I were on my own trying it.
There is a restaurant in Jacksonville FL called Clark's Fish Camp. I used to live not far from there, they had a wide assortment of exotic food. Gator, Eel, Kangaroo, Ostrich, Snake, Camel, etc. Some nice seafood restaurants have a lobster tank where you can pick your own lobster. This place has a gator tank where you can pick your own alligator LOL.
The whole place is covered from floor to ceiling in taxidermy... They have stuffed lions, monkeys, bears, zebra, you name it. It's definitely an experience.
Kangaroo, alligator, iguana, emu, ostrich... maybe some I'm forgetting. Nothing that blew my socks off.
I cant say I have either!! (Cause I havent)
